Grilled Chicken Shish Kabobs with Keto Barbecue Sauce Recipe

Ingredients:

1 pound raw chicken breasts
1 medium onion, quartered then large chopped
1 large or 2 medium yellow squash, chopped in large pieces
1 red bell pepper, large chopped
8 wood or metal skewers (if using wood skewers, soak in water for 1 hour before use)

Directions:

1. Skewer the shish kabobs, alternating squash, onion, chicken, and then red bell pepper. 

2. Make keto barbecue sauce (recipe below) and brush over shish kabobs. 

3. Cover with foil and marinate in refrigerator for 1-3 hours. 

4. Put on grill with at least 1 inch between them. Grill on each side for 6-7 minutes or until well done.

Keto BBQ Sauce Recipe:

8 ounces organic tomato sauce
1 tablespoon onion powder
1/2 teaspoon garlic salt
1 tablespoon chili powder
2 tablespoons Worcestershire sauce
2 tablespoons mustard
1/3 cup Sweet-N-Natural
1 teaspoon liquid smoke (optional)
1/2 teaspoon salt
2 tablespoons apple cider vinegar
2 tablespoons olive or coconut oil

Combine all ingredients for the sauce in a small sauce pan, bring to a boil, and then let simmer on low heat for 15-30 minutes.
